How to prepare the rice salad

Summer, time for fresh foods that must be satisfied in the belly and throat without weighing it down: What's better than a 'rice salad, perfect for a dinner among friends ?

Beware, though, is a really easy dish to make, but not trivial.

First, is really better not to use ready-made pickles, but use only fresh ingredients. In this regard, you can pick according to your taste and your needs, here are the standard ones.

Preparation

Specific rice salad Hard-boiled eggs Canned tuna Ham/ Li> Frankfurter Tomatoes Cheese Olives (any kind) Anchovies Capers (pickled or salted) Lemon Oil Salt

Instructions

Put water on to boil while you are going to prepare the sauce. The amount of rice to cook depends on the number of persons for whom you are preparing, however, counted about a pound per person. What moves is still good to eat as little aperitif at your next meal, you just keep it in the refrigerator.

When the rice is ready, let it cool initially by pulling them fresh water.

Meanwhile also cooked eggs (at least two).

It is important to prepare the sauce before the rice is cooked, because that datehow the various ingredients soaking a bit 'together and blend well.

Before you add all the ingredients you need to make some preparatory steps:

diced ham, if you bought the whole piece and not the packs with ready-diced; the sliced sausage; diced cheese. You can also use different types, are usually perfect Fontina, Asiago ol'Emmental. More flavorful cheeses such as Auricchio spicy give a particular taste; washed and chopped tomatoes; pitted and chopped olives, if you have not already bought stoned; chopped anchovies; shelled boiled eggs, when ready, and cut into large pieces; washed by salt capers,if you use those in salt; when you open the can of tuna, preferably extra virgin olive oil you can use the content, which preserves the taste of tuna.

You are now ready to combine all ingredients in a bowl at the end paid a little 'oil, sprinkle some' lemon, being careful to recall that fall into the pits, and salt, stirring well to everything.

When the rice is ready, which is cooked and cooled, add to the dressing and season again with salt, lemon and olive oil. If we have them, you can also add pine nuts or any ingredient you tease, mozzarella, cucumbers, peas, onion or chives, even fish, to make a marine version, simply end the sauce on rice is not predominant. Someone using the mayonnaise, but it is not necessary, indeed, the pot weights.

Of course, if you're vegetarian > You can do everything the same way, but do not use the ham.

Now put everything in the fridge for half an hour, pull out a few minutes before serving, take a good mixed … and enjoy!
